MIGF 2016 Festival Menu 马来西亚国际美食节精选餐单 - Samplings on the Fourteenth Restaurant


早前应邀前往Samplings on the Fourteenth Restaurant,品尝了该餐厅为配合MIGF 2016而精心打造的Full FestivalMenu餐单。
相隔一年后再次造访这家位于Berjaya Times Square Hotel Kuala Lumpur的空中餐厅。由于位于酒店的14,加上酒店位于隆市金三角繁华购物及商业地段,坐在餐厅用餐的宾客不仅可以欣赏到日落之美,入夜后还可俯瞰城市全景,饱览迷人的夜景,惬意地享受居高临下的用餐体验。
负责掌厨的是拥有26年入厨经验,高超厨艺的Chef Valmurugan总厨。宾客可透过全玻璃的独特厨房设计,看到他和其团队如何在厨房挥洒自如地透过创意,去打造出佳肴美馔。
Amuse Bouche
Lamb tartlet with goat cheese croquetas

是夜晚宴率先登场的是Amuse Bouche
Amuse-bouche是厨师特备的小点心,法语Amuse-bouche英文直译为Mouth Amuser,意即意即享用正餐前先刺激一下食客的味蕾或取悅口腔。它异于一般熟知的开胃菜,份量极少。
这份一口羊肉塔带有浓郁的芝士香气,搭配餐前美酒特别搭。
Appetizer 1
Pan-fried haloumi, chilled marinated vegetables in season and lemon emulsion
Hugel Gentil Alsace, France, vintage 2014
精致开胃菜的主角是Haloumi纯羊奶芝士。只需把它略为煎香即可,并没有想象中的羊骚味,而且甚有嚼劲。单纯吃时其味道稍微咸香,但是搭配各式清甜的蔬菜却搭配得宜,带来出乎意料的美味。
Soup
Green pea cream, artichoke chips and tomato tartar
绿色的豌豆奶油汤香滑无比,再搭配小番茄,为淡淡的豆香味添加了一丝微酸之余,也增添了口感。
Appetizer 2
Poached baby mackerel, chick pea puree, smoked garlic cream and walnut
Tahuna Marborough Sauvignon Blanc, Vintage 2014
另一道开胃菜则是水煮马鲛鱼。只需简单地以水煮方式料理,即能尝到鱼原本的鲜味。伴碟的鹰嘴豆泥和核桃碎,将为味蕾迎来多重的口感。
搭配的白葡萄酒则是Tahuna Marborough Sauvignon Blanc, vintage 2014.
Palate Cleanser
Malibu lime sorbet
开始主菜前先品尝palate cleanser,让酸中带甜的青柠雪葩先清一清口腔,准备迎战丰盛的主菜。
Main Course
Wagyu beef medallion, pumpkin with a hint of Xeres vinegar, duck foie gras and thyme juice
Trivento Reserve Malbec, Argentina, vintage 2014/2015
套餐共设有3道主菜供选择,我则点了这份矜贵的和牛作为主菜。贵价和牛只需稍微香煎至七分熟,核心肉质呈淡淡粉红色,外向内软又多汁爽口;再搭配入口即化的鹅肝,奢华度爆灯。
美丽的夜晚有美馔和美酒的相伴,夫复何求啊。

2道主菜选择分别是:
Pan-Fried halibut fillet, smoked tomato puree, parsnip and shell fish froth
Slow cooked Cutlet of lamb, baked stuffed red onion, glazed root vegetables and a jus of cherry
Dessert
Guanaja chocolate, delice, sea salt flakes, butter scotch and cream cheese mousseline
Graham’s Fine Tawny Port, Douro non-vintage
细致的甜品有特选可可含量达70%Guanaja巧克力蛋糕,浓郁醇厚的味道夹着chocolate ganache,带来极富多层次的口感,让口腔享受苦甜交错的强烈冲击之余,洒上的海盐还具画龙点睛之效。品尝一口巧克力蛋糕后再浅尝Graham’s Fine Tawny Port, Douro non-vintage,幸福感满泄!
